  • 2 red bell pepper
  • Margarine
  • Lemon juice
  • Lemon rind, grated
  • Fresh thyme, chopped
  • Fresh parsley, chopped
  • Spring onions, chopped
  • Paprika
  • Knorr chicken stock, cubes, crumbled
  • Cayenne pepper
  • Coarse black pepper
  • Flour
  • 8 chicken thigh

Preparation Method

  • Preheat the oven to 180 degrees Celsius
  • In a bowl, mix together the mayonnaise, herbs, lemon juice and rind, paprika, crumbled KNORR cubes, cayenne pepper, coarse black pepper and flour
  • When well mixed, push the mix under the skin of the thighs.
  • Place on an oven tray with the chopped bell pepper
  • Bake for 30 – 40 minutes until done and golden
  • Serve with chips, rice or salad
