Beef & Spinach Stew

Spinach is a great source of multiple nutrients and is also low in calories. Served with sweet potatoes or boiled plantains, this dish is perfect for either lunch or dinner.

Ingredients

  • Stewing Beef cut into cubes
  • Ginger ale
  • Crushed red chilli
  • Coarse black pepper
  • 1 Tomatoes
  • Knorr Beef cubes
  • Fresh spinach (20 medium leaves)
  • 2 Onions
  • 1 Tomato
  • Fresh Thyme
  • Corn starch
  • Cold water

Preparation Method

  • Cut the meat in cubes and brown in some vegetable oil in a pot
  • Add the ginger ale, chilli flakes, black pepper and 1 chopped tomato and KNORR beef cubes. Cover and simmer for 1 ½ hours until the meat is tender.
  • In the meantime, wash the spinach, remove the stems, and cut up roughly
  • Slice the onion into thin rings and the tomato into slices
  • Mix the corn starch with the water and add to the meat and stir while it thickens
  • Add the spinach, onion, rings, tomato slices and fresh thyme to the pot, cover and simmer until the vegetables are done
  • Serve with rice
