Jollof rice with chopped fish and seafood

Ingredients

  • ½ Onion, sliced
  • Oil
  • 1 clove garlic, chopped
  • 2 chillies, halved
  • KNORR chicken cubes, crumbled
  • Medium curry
  • Ground cumin
  • Ground coriander
  • Paprika
  • Peri peri spice
  • Basmati rice
  • Firm white fish, cut in cubes
  • Seafood mix
  • Water
  • Prawns
  • 2 tomatoes, chopped
  • Fresh coriander, chopped

Preparation Method

  • In a large pan, fry the onion and garlic until lightly browned
  • Add the chillies, and all the spices and fry for 2 minutes
  • Add the cut up fish and the seafood mix, stir well to coat with spices, then add the rice and water
  • Bring to the boil, then turn down the heat and simmer for 20 minutes, stirring occasionally
  • Add the chopped tomato and prawns and simmer for 3 – 5 minutes
  • Sir in the chopped coriander and serve
