Meat loaf with tomato and onion gravy

Follow this easy to make recipe and enjoy with either chips or yam.

Ingredients

  • 1 Onion, finely chopped
  • Beef mince
  • 2 cloves garlic, chopped
  • Dry breadcrumbs
  • KNORR beef cubes, crumbled
  • Paprika
  • Crushed chilli flakes
  • Coarse black pepper
  • Fresh thyme chopped
  • 1 Egg
  • SAUCE: ½ onion, chopped
  • Oil
  • Sugar
  • Knorr beef stock cubes
  • Water
  • Blended tomato, chilli, red pepper mix
  • Corn flour

Preparation Method

  • Preheat the oven to 180 degrees
  • In a bowl, mix all the ingredients until well combined
  • Shape into a loaf, or press into a loaf tin
  • Bake uncovered for 50 – 60 minutes
  • For the SAUCE: Fry the onion in the oil until browned
  • Add the remaining ingredients except the corn flour and simmer for 10 minutes
  • Mix the corn flour with some water, add to the sauce and allow to thicken
  • Serve with chips, yam or salad
