Coconut Chicken with Asian vegetables

Knorr’s coconut chicken has just the right amount of flavour. Serve with jasmine rice for an extra fragranced dish.

Ingredients

  • KNORR chicken stock 24g
  • Fresh thyme 10ml
  • Water 125g 125ml
  • Vegetable oil 15g 15ml
  • 8 Chicken pieces 600g
  • Black pepper ground 5ml
  • 2 onions 320g
  • 1 ½ carrots 100g
  • Spinach 100g
  • 1 clove garlic 5ml
  • Ginger, grated 5ml
  • 2 green chillies 10ml
  • Curry powder 15ml
  • Tomato paste 36g 30ml
  • Green beans 100g 15ml
  • 1 tin coconut milk 400g

Preparation Method

  • Prep all the vegetables
  • Brown chicken pieces in oil and add onions.
  • Fry for a few minutes.
  • Add remaining ingredients except fresh green beans and simmer for 30-40 minutes.
  • Add green beans 5 minutes before end of the cooking time.
  • Serve with jasmine rice and sprinkle with fresh coriander leaves.
